Make this easy Christmas, colorful, yummy dessert for the season. Be sure to buy the ice cream early; some stores may run out closer to Christmas

2 1/2 rows of oreos, crushed in food processor with
1 stick of melted butter
1/2 gallon peppermint ice cream, softened at room temperature about 1 hour
Spread Oreos (keeping about 3 T. of crushed cookies for topping) in 11x13 pan, or smaller. Spread softened ice cream on top. Cover and place back in freezer. If you wish, you can top with crushed Oreos and have a nice dessert OR you can make a fudge topping (optional).
Fudge Sauce
1/2 c. sugar
1 T butter
2 c. semi-sweet chocolate chips
2/3 c. evaporated milk
Heat all until thick, 3 or 4 minutes. Cool a little then cover with 8 oz of cool whip (optional) and sprinkle with leftover cookie topping. Can also chop 1/2 cups of pecans and sprinkle on top as well (optional). Keep in freezer until ready to serve.
