Back to School Fall Pancakes

A yummy recipe for a great start back to school after Fall Break:

Spicy Pumpkin Pancakes

2 1/3 cups Reduced Fat Bisquick
1 1/4 cups milk
3 egg whites
1/3 cup canned pumpkin
2 TBS sugar
2 TBS vegetable oil
3/4 tsp pumpkin pie spice

Stir all ingredients until blended.  Pour onto hot griddle.  Makes 19 pancakes.

*** Serve with hot apple cider

Recipe for Moist, Delicious Pumpkin Bread

1 1/2 c. sugar
1 2/3 c. flour or whole wheat flour
1/4 t. baking powder
1 t. baking soda
1/2 t. ground cloves
3/4 t. salt
1/2 t. cinnamon
1 c. pumpkin
2 eggs
1/2 c. water
1/2 c. oil
1/2 c. nuts

Combine all ingredients except nuts.  Mix for 3 minutes then fold in nuts.  Spread mixture in 1 large or 2 small loaf pans.  Bake at 325 for 1+ hour large pan or 45-60 minutes smaller pans.  Cooking times vary greatly.  Enjoy a great taste of fall!
